Packed with protein, vitamins, and minerals from various seed, nuts, and berries, this recipe is quick, easy, and could be altered to make use of whatever you have in your pantry.

Ingredients
- 2 cups raw nuts (cashews, almonds, macadamia, walnuts)
- 2 cups pitted medjool dates
Optional:
- 2 tbsp lemon juice and 1 tbsp lemon zest
- Dried cranberries, raisins, apricots, cherries, blueberries, mangos, pineapple, apples
- Chocolate chips, peanut butter chips,
- Raw cacao nibs, shredded coconut or goji berries, or decaf coffee grinds
- Flax seeds, chia seeds, hemp seeds, sesame seeds, sunflower seeds, pumpkin seeds
- Vanilla, almond, lemon, orange, or coconut extract made from pure oils
Instructions
Process nuts in a food processor or powerful blender until they are well ground; stop before they turn to butter. Add dates and process until the mixture sticks in a large ball. Next, get creative and add any one (or all) of the optional ingredients listed below. (I love coconut, dried cherries, and raw cacao nibs for the perfect combination of tart and sweet–plus just the right amount of crunch). Mix again to combine.
