The Feed | Chocolate Peanut Butter Ice Cream Sandwich Cookies

Munchies Is Life ( I need to make that T-Shirt…Immediately)  So when I come across delicious things, I always try them, then share them with the people that matter.  This recipe comes from jensfavoritecookies.com, its easy as ever and takes about 12 minutes from start to finish.  Not to mention, its probably the best homemade peanut butter cookies you’ll ever make.

Ingredients

  • ½ cup butter, softened
  • ½ cup peanut butter
  • ⅔ cup sugar
  • ⅓ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1¾ cup flour
  • chocolate ice cream

Instructions

  1. Cream butter, peanut butter, and sugars. Add egg and vanilla and mix well.
  2. Add salt, soda, and flour, and mix until combined.
  3. Form dough into large 2-inch balls, and place on a baking sheet. Use a fork to flatten cookies. Bake at 350F for 12-14 minutes.
  4. Let ice cream soften slightly. Place a generous amount of ice cream between two cookies. Place sandwiches in the freezer for 20-30 minutes before serving.
